Thimu coffee factory is based on the south slopes of Mount Kenya. It is well regarded for high quality washed coffees. Thimu means ‘proverbs’.
During breaks, young men would learn Kikuyu proverbs from the older generation. It is believed that the more proverbs one knows, the wiser he is.
Thimu works with approx. 3000 different farmers from the local area, all of them bringing small amounts of cherries from their gardens. Good altitude and extremely rich soil really allow this coffee to excel.
Flavour Profile of Kenya Thimu AA
Good altitude and extremely rich soil allow the Kenya Thimu AA coffee to excel from the well-regarded Thimu coffee factory in Kirinyaga.
Farmers bring their cherries to the collection point. Then the beans are manually separated by a quality and weighed. Sorted cherries are then pulped on disc pulpers and left to ferment for 12-18 hours.
After the fermentation period, the mucilage is washed away and the clean parchment beans are transferred onto raised beds where they are then sun-dried over the course of 14-16 days.
After the drying phase, the Arabica SL28 and SL34 varietals are roasted to pure perfection to create a coffee blend that is full of sweet notes of Blackcurrant, Tamarillo & Maple Syrup.
